While this is a fun trick, the whole reason Photoshop has a gray background is that it’s a neutral color to design on. Working with another color in the background could ‘throw off’ your perception of the colors you are working with.
This will help when you’re working with an image designed to go with a specific background colour…the background colour invariably affects how the viewer sees the colours within the image and this way you can custom correct your it accordingly.

In CS3 you can hold control and click the gray area with the cursor to change the background.

I guess it’d also be helpful for adjusting if you’re using an old CRT monitor with bad color!
